Vanilla Cake Recipe

This recipe is for our delicious Vanilla Cake.
 
This recipe takes about 40 minutes to prepare and cook.
Makes 1 cake
 
vegan vanilla cake
 
Ingredients
 
Cake Mix
1 cup plain flour
1/2 cup self-raising flour
1 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon cinnamon
1 cups soy milk
1/3 cup rice bran oil
1/4 cup water
1 tablespoon apple cider vinegar
1 1/2 teaspoons lemon juice
1 tablespoon vanilla extract
1/2 teaspoon almond extract
 
Vanilla Frosting
4 cups icing sugar
1/3 cup soy milk
200 grams Nuttelex
1 teaspoon vanilla extract
 
 
Cooking Instructions
1. Preheat oven to 180C.
2. Line a heart shaped (or small square) cake pan with baking paper.
3. In a mixer bowl, combine all dry ingredients until mixed thoroughly.
4. Add all wet ingredients and continue to mix until batter is free of any lumps.
5. Pour batter into cake pan
6. Bake for 15-20 minutes until you can insert a toothpick into the middle of the cake and it comes out clean.
7. Let cake cool for at least 30 minutes before adding frosting.
8. Add all frosting ingredients together in a mixer bowl.
9. Mix on low speed until frosting is smooth with no lumps.
10. Once cake has cooled, add frosting to cake. Add some fresh berries (optional)
 
Cake is now ready to serve, enjoy.
